Cajun Bayou Style Jambalaya Recipe

1 fryer chicken, cut-up & deboned (3 to 4 lbs.)
3 tsp. corn oil
1 tbsp. Salt
Cajun seasoning
1 lg. Onion chopped
1/2 cup chopped celery
1/2 cup chopped bell pepper
5 cups water
6 chicken bouillon cubes
1/8 cup parsley, chopped fine
2 cups uncooked rice

Season cut-up chicken. Brown chicken in oil, set aside. In a large pot saute onions, celery, & bell peppers. Add water, chicken bouillon cubes and bring to a boil. Boil for 15 minutes. Remove from heat. Add browned chicken, parsley, and raw rice mix lightly. Place in a casserole dish. Cover tightly and bake for 2 hours at 375º for the first hour and at 350º for the second hour.
