Beignet Recipe
2 or 3 cups flour
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon baking soda
1 cup sugar
½ teaspoon nutmeg
4 eggs, well beaten
½ cup water
¼ teaspoon vanilla
oil for deep frying
powdered sugar (optional)
Mix dry ingredients. Combine egg, water, and vanilla. Add to dry ingredients. Mix only until moistened throughout. Knead lightly on slightly floured board. Roll 1/3 inch thick. Cut into rectangles 2 inches by 3 inches. Fry in oil until golden brown, turning once. Drain on paper towels. You can coat them with powdered sugar.
